Bruschetta with coloured cherry tomatoes

Among the quick starters, bruschettas are a must! Simple but impactful, they are always enjoyed by young and old alike. Make them more appetising by including colourful ingredients such as our Mix Colour, avocado and spinach for a hearty yet vitamin- and mineral-rich dish.

Preparation


Making bruschetta is very easy and they are always a hit on the table. First, choose a good homemade bread with a thick crust and cut slices of about one centimetre. Grill the bread on both sides until golden and crispy (you can also toast it in the oven under the grill). While still warm, rub each slice with a clove of garlic for flavour, then drizzle with a little quality extra virgin olive oil, letting the bread absorb it well. Now spread a thin layer of ricotta and cheese, so you have a very tasty base.

The toppings for bruschettas are endless, a classic being tomato bruschetta: cut some cherry tomatoes into small cubes, season with salt, pepper and fresh basil and spread them on the bread. You can vary in a thousand ways, there is no rule when it comes to bruschetta! Add ingredients such as mozzarella, olives, prosciutto or grilled vegetables: the combinations are endless. Enjoy!
